There is no better feeling that stumbling across a new recipe your whole family falls in love with. Bonus points if it’s a recipe that is easy to make and pretty cheap too! I originally got this recipe from a friend after seeing her make it on Instagram. I wanted to give it a shot but with my own twist on ingredients. The thing I love about this recipe is that you can change up the meat, add in different ingredients (I think mushrooms or spinach would make this so yummy!)

This recipe is technically called a “soup” but I always consider a soup to have more liquid than this one ends up with. Or maybe I am such a big cheese girl that mine just ends up creamier than originally intended. Regardless, I love how forgiving this recipe is. I never measure anything – just go with what your heart tells you! But if you need a starting place, of course I have listed out the full recipe and amounts below! This is going to become part of your weekly meal plan, I just know it! Enjoy!

  1. Cook the ground beef in a large saucepan or pot until browned, breaking the meat apart as it cooks
  2. Add in the onion and cook for 1 minute
  3. Drain the excess grease
  4. Add the garlic and red pepper flakes, mix together, and cook until fragrant, about one minute
  5. Add the broth, tomatoes, pasta, and Italian seasoning, bring to a boil, reduce the heat and simmer until the pasta is cooked, al-dente (8 minutes or so)
  6. Add in the parmesan, cream cheese, and cream, and let the cheeses melt into the soup (about 5 minutes)
  7. Season with salt and pepper to taste, mix in the parsley and enjoy!
