  • 1 cup shredded sharp cheddar cheese (about 4 ounces)
  • 2 green onions, sliced

How to Make Cowboy Spaghetti

Step 1: Brown the sausage

In a large Dutch oven, cook the venison sausage over medium heat until it’s browned and crumbly. Add the garlic, jalapeño, and onion to the drippings and cook, stirring often, for 5–7 minutes until softened and fragrant. Sprinkle in the chili powder, salt, cumin, oregano, and black pepper.

Step 2: Make the sauce

Stir in the crushed tomatoes, diced tomatoes (with their liquid), beans, broth, and Worcestershire sauce. Bring everything to a boil, then reduce the heat to medium-low and let it simmer uncovered for about 15 minutes. The flavors will meld together beautifully.

Step 3: Cook the pasta

While the sauce simmers, bring a large pot of salted water to a boil. Cook the spaghetti according to package directions, then drain—reserving about ½ cup of pasta water.

Step 4: Combine and serve
