There I was, with a vision of a funfetti layer cake for our daughter Fallon’s first birthday party. I had decided that I was going to make it from scratch. So I was going to do a practice round and use it for her smash cake. Seemed easy enough, right? And I will admit – it wasn’t hard to make! Everything was going so well. The batter even tasted good, because obviously I licked the spoon! But then it all went downhill when I removed the baked cakes from the oven and realized that I must not have greased my new pans enough. The cakes were stuck and there was no getting them out in one piece. And ultimately I had to start completely over. So as long as you don’t make my mistake – you should be great!

All humor aside, this cake did turn out pretty yummy! The second time around that is. It made for such a fun smash cake for Fallon. But I will admit, I think for her party I am just going to make a boxed cake. Shh – don’t tell anyone!

Vanilla Buttercream Frosting

Instructions

  1. Preheat your oven to 350 degrees.
  2. Start by making the cake batter. Add the softened butter and sugar to a large bowl. Beat until soft and fluffy. Add in the eggs one at a time, beating until combined after each addition.
  3. In a separate bowl combine the dry ingredients – flour and baking powder. Add the flour mixture and milk alternately into the cake batter until all is combined, beating after each addition.
  4. Stir in the vanilla extract and rainbow sprinkles.
  5. Grease or parchment paper line three 8″ cake pans. Add about 1 1/2 cups of the cake batter to each pan. Spread evenly. Bake for 30 minutes.
  6. Remove the cakes from the oven and let cool completely. Allowing the cakes to be completely cool before removing from the pans.
  7. While the cakes are cooling work on the vanilla buttercream. Start by beating both the softened butters with a mixer until smooth. Add in the powdered sugar little by a little. Begin by beating on a low speed and work up to medium once all the sugar is added. Next beat in the milk and vanilla extract until evenly combined.
  8. For cake assembly begin with one of the 8″ cakes. Add a scoop of the frosting on top, spread evenly, and then add the next cake. Repeat this step again for the third layer.
  9. Then you can decorate however you like!
  10. Enjoy!

If All Else Fails

Look, I am not a professional baker, and I am not trying to be one. I made the dang thing for the cake smash but I am not going to lie, for her party I am just going to throw some boxed Funfetti together and call it a day. This mama ain’t got no time for that. If you do however, I think this recipe turned out very yummy! I am just not down to make it a 3rd time in 1 week.

Mix 1/4 to 1/2 cup of sprinkles into the prepared cake mix and bake! Then decorate as you please!
